Good recipes but bad pain…

It’s been a while since my last post, but I’m happy to report that my bowels appear to be in a state of harmony at the moment!

ALTHOUGH I have had for the last 6 weeks terrible joint pain. Initially I thought I must have a virus  (menangitis has been going around and several friends have it), and I guess if it’s viral then it still could be, but I am wondering if anybody else in IBD land has had similar despite the fact that the bowel is symptom free???

Anyway 2 good recipes I’ve been using ”

1. Lamb burgers – 500g ground lamb, 1 onion chopped finely (grated or food processor), teaspoon cumin,,small chilli finely chopped, 1 egg, fresh corriander finely chopped (cilantro to you americans)

Mix together in a bowl and divide into patties, wrap in clingfilm and chill for a couple of hours before cooking. Cook (fry, grill or bbq)

Delicious served with roasted veg or salad

2.Chicken legs x 4, large knob  melted  butter (100g), garlic crushed, tablespoon dijon (french) mustard, 3 tablespoons honey, flaked almonds

Mix together marinade in dish that you will then place chicken in , cover, place in fridge (4hours, or overnight) cook in hot oven for 40 mins, uncover and sprinkle with flaked almonds and cook until golden brown (to taste)

Delicious served with butternut squash and veg.
