Delicious Nearly SCD Cupcakes

Hello All!
If you are like me and have a little bit of a sweet tooth you look for things that you can snack on. Sometimes when I do my kids birthday parties I make their cakes, (but not SCD compliant of course) and they are delicious! I have GREAT news! I found this recipe book which deals with mostly Gluten free stuff, but it is an ALMOND FLOUR ONLY cookbook…yippie!! Its called “the gluten free Almond-flour cookbook”

Here’s the recipe…
2 Lg eggs, separated
1/4 C grapeseed oil
1/2 C Honey
1 TBSP Vanilla Extract
1 TBSP fresh lemon juice
2 1/2 C Blanched Almond Flour
1/2 tsp Baking soda

Super Easy and DELICIOUS!

And for an Icing…its a whipped cream frosting
2 C Heavy Cream
2 TBSP Honey
1 TBSP Vanilla

I know that the heavy cream might not be SCD compliant, but you might be able to get the LACTAID version of it and see if that works.

  1. um… It’s kinda late here. I’m out of orange juice to make a smoothie. would you by any chance be able to bring over one of those cupcakes? I’m SUPER in the mood for one or two er three of them..? TASTY!
