I promised to several people a little while ago some more ideas on great meals that helps everyone forget you have UC and that work well with the diet that has kept me off medications (now for several months.) This is something that only requires a grill/BBQ. It’s pretty simple, I can even make it without any help, so you definitely can too.
The idea is this:
some meat for protein (I happened to grill a tri-tip steak. It’s about 2 pounds so I plan on putting the leftovers in the fridge to snack on over the next few days. I hope it doesn’t turn into a science project in there.)
some veggies that you can put on a skewer or kabob stick (I used mushrooms, zuchinni, and red peppers. also put some olive oil on them before throwing them on the grill.)
That’s pretty much it. For quite a while especially back in the end of ’08 and early ’09 I was super scared of eating anything off the BBQ because I thought my UC didn’t like that at all going down the pipes. One day over a year ago when I was having 10-20 bowel movements per day, I was at my brother’s for a BBQ and had a whole bunch of BBQ chicken, 2 chocolate cookies, and who knows what else. Anyways, the next day I was in the emergency room at Stanford Hospital because I collapsed in the bathroom on the floor. Before collapsing, I was sitting on the pot, and just got very light headed. After a few minutes, I was able to get back up and back on the pot, and my wife decided it was getting to out of control and we went down to the ER. This was about a week or two after my colonoscopy when I was diagnosed so that doctor came and visited me. To this day, I don’t know what happened, or if it had anything to do with the meal the night before, but one thing is for sure. The days of dumping BBQ sauce on chicken/steak or ribs is over for me. There is way too much sugar in that stuff, and my body can’t tolerate that. Its actually probably corn syrup in most BBQ sauces. But, I surely eat a ton of BBQ meats, just without sauces like I used to love. Back in the day when I was full of colitis symptoms I was able to polish off a 9 piece Chicken nuggets at McDonald’s and it was usually my goal to use up 3 of the BBQ sauces they give you there…. Those days again are long gone for me, it sure tastes good that stuff, but not necessary and definitely that sugary stuff does not fit into the UC diet I am so happy with.

I started site and the eNewsletter(you can join that below) shortly after being diagnosed with ulcerative colitis in October of 2008 with severe pancolitis (when my whole colon was inflamed).
For me, it was a very rough start with severe symptoms. Getting bounced from medication to medication was not easy or too helpful. But, I did meet another UC’er, changes several parts of my diet, and of course the rest is history.
