You can still eat muffins with Ulcerative Colitis
Sure you Can, Just with a new twist
I definitely can’t take full credit for this recipe, this recipe comes from Paul from eatingscd.com, and here is a link to the muffin recipe in its original form. I did everything he asked, but instead of using the yogurt, I used two banana’s instead. Turned out great.
Here are some photos, made these about ten minutes ago, so they are still warm, and disappearing quickly. Thanks Paul, you rock! The recipe is below the pictures:
So Here is the Recipe, it takes about 40 minutes from you reading this webpage to being able to chow down on these things, so start by putting your oven on at 350 degrees fareinheight.
Next:
3 cups almond flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3 eggs
2 ripe bananas, mash em good
1/2 cup of honey (honey is oh so nice)
1/2 teaspoon of vanilla if you like

Fill in the muffin cups 2/3 full and bake for 25-30 minutes or until you think they look good, or until you can’t wait any longer.
a note from Paul is to remove them quickly once you take them out so they don’t burn, its that simple and Paul has been eating hundreds of these for years now and looks and feels great!!!

For me, it was a very rough start with severe symptoms. Getting bounced from medication to medication was not easy or too helpful. But, I did meet another UC’er, changes several parts of my diet, and of course the rest is history.

I made these for my husband but added some chopped nuts to the mix. Sort of like a scd banana nutbread muffin :-) They turned out really well.

Thank you so much for the delicious recipe! I’m new to the scd diet and have not been happy when I’ve wasted (very expensive) almond flour making bisquits or crackers that turn out inedible. These muffins were a big hit with the non-scd eaters in my family too. Thanks!
Hey Adam, in your book I thought you said to be carful with the almond flour? Is this recipe safer than the Blueberry cake recipe in your book? Or should I still be careful about not over doing it with the almond flour?

Thanks for your question Melissa. Almond flour for baking just about anything is something I’d be very careful with especially for anyone who is getting out a recent flare and as well for anyone who is new to eating almond flour. It’s very very easy to overdue the almond flour and it is very easy to find yourself in a flare again if your body can’t tolerate a large amount of it. (So go real slow with it before diving into three muffins or pieces of cake right off the bat:)
