Delicious Nearly SCD Cupcakes

Hello All!
If you are like me and have a little bit of a sweet tooth you look for things that you can snack on. Sometimes when I do my kids birthday parties I make their cakes, (but not SCD compliant of course) and they are delicious! I have GREAT news! I found this recipe book which deals with mostly Gluten free stuff, but it is an ALMOND FLOUR ONLY cookbook…yippie!! Its called “the gluten free Almond-flour cookbook”

Here’s the recipe…
2 Lg eggs, separated
1/4 C grapeseed oil
1/2 C Honey
1 TBSP Vanilla Extract
1 TBSP fresh lemon juice
2 1/2 C Blanched Almond Flour
1/2 tsp Baking soda

Super Easy and DELICIOUS!

And for an Icing…its a whipped cream frosting
2 C Heavy Cream
2 TBSP Honey
1 TBSP Vanilla

I know that the heavy cream might not be SCD compliant, but you might be able to get the LACTAID version of it and see if that works.
